Georgian Bay Eco Gin is an unflavored craft spirit produced by Georgian Bay Spirits Co. in Ontario, Canada. Formulated with a commitment to environmental sustainability, this expression features a lighter-weight eco-conscious bottle and utilizes a 100% local Canadian wheat neutral spirit base combined with pure Georgian Bay area water. Its botanical bill includes hand-selected juniper, coriander, orange peel, cardamom, and local botanical accents. The resulting gin offers a clean, crisp, and citrus-forward contemporary profile that balances traditional juniper structure with a soft, eco-friendly footprint.
Food Pairing: Smoked trout, fresh oysters, grilled lemon-herb chicken, goat cheese crostini, and cucumber-dill salads.
Tasting Notes: Crystal clear in appearance with a light, smooth, and crisp mouthfeel.
Nose: Fresh and aromatic up front, featuring bright lemon and sweet orange oils, backed by crisp pine juniper and a subtle warmth of ground cardamom and coriander.
Palate: Well-balanced and refreshing on the palate, opening with a burst of zesty citrus, transitioning into resinous pine juniper, light floral undertones, and a soft, grain-sweet warmth.
Finish: Medium-length, dry, and clean with lingering notes of citrus peel, gentle pine needle, and a crisp, peppery tail.
Serve: Serve over ice topped with premium Indian tonic water, garnished with a wheel of fresh lemon or a slice of lime, or build into a classic Gin & Tonic, Southside, or Gimlet.
